Wild Mushroom Risotto Pearls over a bed of Rocket and Mache
served with Pomegranate Molasses Vinaigrette

-Chimay Blanche Cinq Cents. (also known as Chimay Triple) - Bright golden-yellow. Medium-bodied. Dryest of all three.

Second Course
Chimay and Mustard Braised Kurobuta Pork Shank served over a Fennel, Leek, and Pistachio Hash finished with Roasted Summer Vegetables

- Chimay Rouge Premiere. Bright red amber. Medium-bodied. Mild bitterness.

Third Course
Zabaglione Custard Triffle with Fresh Summer Berries

- Chimay Bleue Grand Reserve - Bright red amber. Moderately full-bodied. Moderate bitterness.
